Dried tomatoes with olive oil

How can we substitute vegetables when the season is over? With properly processed vegetables, like our dried tomatoes in extra virgin olive oil. They can be a healthy addition to sandwiches, salads, sauces and pasta.

The idea to dry the tomatoes was born in Italy. They were placed in the sun to reinforce their taste and, what’s interesting, this process increased their health claims! As it turned out, dried tomatoes have more valuable lycopene than fresh ones, and the lycopene in dried tomatoes is better absorbed by the body. The addition of olive oil also helps with the absorption of vitamins from dried tomatoes.

Fun fact about health: Tomatoes are the best source of lycopene, an organic chemical compound with antioxidant properties. What’s interesting is that those properties are not lost during thermal treatment or with time.
